Need a little bit of convincing that green smoothies are for you? Try this incredible, creamy mix from my favourite Blender Girl, Tess Masters. Once addicted (and you will be!), you can try out some tweaks for an even healthier breakfast shake. I add more kale, less banana, and sprinkle in chia seeds as well as raw cacao (chocolate ice-cream!).
How to make:
1/2 cup water
1/2 cup raw unsalted cashews, soaked for up to 4 hours (if you have time)
1 cup torn-up curly green kale leaves (1 or 2 large leaves with stalk removed)
2 ripe bananas, fresh or frozen
1 tablespoon pure maple syrup, plus more to taste
1/2 teaspoon vanilla extract
2 cups ice cubes (a little less if using frozen bananas)
Put all of the ingredients into your blender in the order listed and puree for about a minute, until smooth and creamy. Tweak flavours to taste (you may like a bit more kale or sweetener).
Makes 2 servings
