My foody friend Dom says these Quinoa and cocoa cookies are the best cookies she’s ever baked – which makes them super delicious.

For our level 6 Ka Huna massage training on beautiful Stradbroke Island we had Dom’s to-live-for almond, date and cocoa bliss balls -yum! As well as healthy tantalising treats, her soul delicious blog is filled with brilliant breakfasts, and mouthwatering mains, soups, salads and sides. For healthy food made with loads of aloha–its my new go-to food blog. Don’t miss the Rainbow Raw Pad Thai! …after you try the cookies of course.

Ingredients:
1 cup quinoa flakes
3/4 cup almond meal
2 tablespoons raw cacao
1 tablespoon ground flax & 3 tablespoons of water
1/4 cup coconut sugar
1/2 cup shredded coconut
1 small banana, mashed
1/4 cup coconut oil
2 tablespoons almond milk
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Method:

  1. Preheat oven to 180 degrees C and prepare baking tray with non-stick baking paper.
  2. Mix flax and water in small bowl and put to one side for 15 minutes (flax egg)
  3. Mix together quinoa flakes, cacao, almond meal, shredded coconut, baking soda and powder
  4. In separate bowl blend together coconut sugar, banana and coconut oil. Stir in almond milk, flax egg  and vanilla. Then add to dry ingredients. Mix until well combined forming a sticky dough.
  5. Using damp hands roll & flatten dough into cookie shapes . Place on baking tray and gently flatten with a fork dipped in water to make cookie about 7cm in diameter.
  6. Bake for 15 minutes and allow to stand on baking tray for additional 5 minutes before transferring onto wire rack.

Enjoy with a freshly brewed LSD (Latte of Soy & Dandelion) or your favourite caffeinated beverage!
